Have you seen that new book, "Ice Pop Joy?" It's really inspiring to read about how many concoctions you can create with healthy and nutritious ingredients. I'm going to make different fruit and veggie (yes, vegetable) ice pops this summer. They are a treat that kids love and a great way to get more vitamins and minerals into their diet!
This is an avocado pop! I didn't find this recipe in the book. I experimented with a recipe I found online and substituted coconut water for regular water and used agave instead of sugar.
Ingredients
1/2 cup coconut water
agave to taste
1 small ripe avocados
1 tablespoons lime juice
pinch of salt
**this was not my daughter's favorite but definitely different and I love the color!
