Over The Rainbow Cabbage Salad with Tahini-Lemon Dressing

"Purple foods, like eggplant, beets, blueberries, and purple cabbage, contain anthocyanins. These health-promoting chemicals protect cells in your body and play active roles in promoting eye and heart health, decreasing cancer cell proliferation and more."
It was crunchy, yummy, and oh so healthy!   A perfect way to cleanse from all the holiday cookie eating.
