Cooking Healthy Butternut and Delicata Squash

There are always a variety of winter squash in my kitchen come the Autumn months.  I really love the flavor and I am happy to know how nutritious it is.
Most squash is "low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Calcium and Magnesium, and a very good source of Vitamin A, Vitamin C, Potassium and Manganese."

 My two favorites are butternut squash and the delicata sqaush.   
I keep it very simple when preparing them.  Just cut lengthwise and rub them with olive oil, sprinkle with sea salt, and add a pad of butter.  Place in a cooking dish and then cook in your oven untill tender.

My daughter eats them with a spoon. YUM! 


  1. I love squash! I cook them something like you do. I also sometimes add brown sugar rather than salt and add them in raw chunks to salads.

  2. Looks good. My mom always makes the butternut sweet but I like salt
