My family loves a good sandwich and chooses warm over cold any day. The flavors seem to blend together better when the sandwich is toasted. Of course there is also the yummy irresistible CHEESE that makes everyone hungry for more.
I was recently chosen by Black & Decker to be part of the Ultimate Sandwich Creation group. My mission was to make an original and delicious sandwich with my Black & Decker convection counter top toaster oven. I gave myself some more requirements including a healthy component and one that my husband and child would love.
I chose to make a Salmon Superfood Melt because I am dedicated to getting heart healthy omega 3's into my loved one's bellies. This sandwich also packs a punch with detoxifying parsley, celery, vitamin E enriched walnuts, and cheese loaded with calcium. Then there is the sauce that compliments the fish perfectly.
*A note about salmon: It is truly one of the healthiest fish you can buy, but look for wild instead of farm raised. Fresh is always pricey and hard to find but you can find canned wild salmon in many stores at a great affordable price.
Salmon Super food Melt RECIPE:
2 slices of healthy whole grain bread 1 slice of your favorite cheese (I chose havarti) 1 can of wild salmon 1/4 cup of celery chopped 1/4 cup of walnuts chopped 2 tablespoons of mayonnaise 1/8 cup of chopped parsley tomatoes sliced pepper to taste
Instructions: Mix salmon with mayo, parsley, celery, walnuts, and pepper then spread on the bread. Add the cheese and tomato and place in the toaster oven on the toast setting for a few minutes. When the cheese starts to melt and the bread is a golden brown then promptly remove. For the dipping sauce mix all 3 ingredients together is a small dish. If you like it spicier then add more wasabi. For my daughter I leave the wasabi out.
