Carrot Ginger Soup Recipe

This is my favorite soup to make because it tastes great, its pretty easy, and my daughter loves it. Carrots are good for you because they help maintain healthy vision, immunity, skin health, and help aid in cancer prevention.

When we come home from the beach we love to get snuggled up in comfy clothes and enjoy a hot bowl of soup. The recipe can be made without ginger also

Organic Carrot Ginger Soup

1lb of organic carrots sliced
2 cloves of garlic chopped
3 c organic chicken or vegetable broth
1 onion chopped
2 tablespoons of olive oil
11/2 inch thick piece of ginger
1/2 c organic milk
sage, salt, pepper to season

First, saute onion and garlic in olive oil then add broth carrots and ginger bring it to a boil then reduce heat to simmer and cook until carrots are tender about 20 minutes. Let it cool and then add 1/2 cup of organic milk (this makes it more creamy) sprinkle of sage, pepper, salt and puree' and serve.
