Tsunami Evacuation

Well, I woke up this morning at 3:30 to hear about an 8.8 earthquake and then a Tsunami heading towards Hawaii. The evacuation siren went off at 6:00 am. Yikes, how do you pack up your house in an hour and head to higher ground? What do you take? Well, I ran around and through some essentials in some bags, grabbed my family and off we sped to the middle of island, armed with water bottles, flashlights, food, important papers, and of course my daughter's favorite doll-a.k.a. "Go Baby!"

Well, after 9 hours of waiting we got the best news, ALL CLEAR!

Home again...home sweet sweet home!!!

Pomegranate Cupcakes and Martinis!

My Husband's Pomegranate Vanilla Martini with Agave!

Why is Pomegranate Juice so wonderful? Well, to start pomegranates are full of antioxidants called phytochemicals. Phytochemicals protect plants from harmful elements in the environment, like ultraviolet radiation and pests. They also provide plants with their sensory characteristics such as color, flavor and smell. POM Wonderful 100% Pomegranate Juice is everywhere on store shelves. Have you tried it yet? It is well...wonderful tasting and great for you. My 4 year old doesn't like juice very much, but she does like whole pomegranates and likes when we squeeze our own juice! Pom now comes in little bottles as well as the larger kind. Their website has some great recipes. My husband makes a decadent Pom Martini with agave nectar! I also found this great recipe for Pom cream cheese frosting! I was very excited because my daughter loves pink and cupcakes, so now I have a pink frosting...the natural way! ENJOY!

POM Cream Cheese Frosting
juice from 3-4 large POM Wonderful Pomegranates,* or 1-1/2 cups POM Wonderful 100% Pomegranate Juice
1 cup arils from 1-2 large POM Wonderful Pomegranates
4 oz. soft unsalted butter
8 oz. cream cheese, at room temperature
14 oz. powdered sugar

POM Cream Cheese Frosting: Prepare fresh pomegranate juice*, score 1-2 fresh pomegranates and place in a bowl of water, break open the pomegranates under water to free the arils (seed sacs), the arils will sink to the bottom of the bowl and the membrane will float to the top, sieve and put the arils in a separate bowl. Reserve 1 cup of the arils from fruit and set aside, (refrigerate or freeze remaining arils for another use), reduce the pomegranate juice, over low heat, down to 3 fl. oz., Allow to cool, place butter into electric mixer bowl with paddle attachment and cream on medium-high speed for 1 minute, add the cream cheese and continue to mix for 2 more minutes, turn the speed down to low and slowly add in the powdered sugar and the pomegranate juice reduction, mix until the sugar is fully combined, remove icing from the mixer and place into a piping bag with a round or star tip.

Wrap-n-Mat Review

How many plastic bags do you go through in a day? Probably a lot and even more if you have children. They are so handy and easy to store snacks, leftovers, lunches, and even craft materials.
But if you add up how many plastic bags are being thrown away every day, the number is staggering.

What to do?

Well, I use a lot of reusable containers, but some items just don't warrant a hard bulky container....how about a reusable mat? I was just sent a Wrap-N-Mat to try out.
