Pumpkin Pie French Toast

Oh Bread! Isn't it so yummy? I like to buy whole grain USDA organic bread. One of my favorite breads for french toast is from Rudi's Bakery called Ancient Grain Spelt bread. It has a fantastic light flavor that is perfect for french toast. I just tried their 100% Whole Wheat and now my husband and daughter likes it better for sandwiches because it is softer.

Rudi's Bakery, in Boulder, Colorado, makes lots of different breads, tortillas, and fabulous English muffins. I recently tried their 14 grain bread, which makes a great salmon salad sandwich. And my husband made ONO (that's good in Hawaiian) fish tacos with their spelt tortillas. They were large enough to hold everything and sturdy enough that nothing fell out.

Rudi's Bakery chooses ingredients that are simple, wholesome, and certified organic. They are made the old-fashioned way with ingredients you can pronounce. They never use any high fructose corn syrup, chemical preservatives, or artificial ingredients.

Pumpkin French Toast

2 large organic eggs
1/4 cup organic milk
1/4 cup of pumpkin pie mix 
1 teaspoon of pumpkin pie seasoning
6 slices of Rudi's bread
3 tablespoons coconut oil
sprinkle of Flax seeds

Preheat oven to 350° F.

Whisk together eggs, milk, pumpkin, until blended. Pour into a large baking pan and soak bread slices in 1 layer, turning once to coat both sides. Pour oil in a skillet over moderately high heat. Transfer soaked bread slices to skillet and cook until golden brown. Transfer slices to a large shallow baking pan. After all slices are browned and arranged in baking pan, bake on a center oven-rack until hot, about 5 minutes.
