Flaky warm biscuit topped with homemade pumpkin butter!
Pumpkin puree' mixed with spices and yogurt
Make your own pumpkin butter! It's easy and a sweet treat that not only hits the autumn spot but is packed with vitamins. Pumpkins are good for a lot more than carving. They are loaded with vitamin A, vitamins C, K, and E, magnesium, potassium, and iron. Roasting pumpkins are fun, but for convenience, using canned pumpkin is still nutritious and delicious.
(Recipe from "The Pioneer Woman")
INGREDIENTS
1 can of pumpkin or freshly pureed pumpkin
1 cup of organic powdered sugar
1 cup of organic yogurt
1tsp of pumpkin pie spice
Just combine and serve!
The biscuit is from Immaculate baking Co. They are a more natural biscuit that is flaky, light, and they come in peel and pop containers. I found these biscuits in Whole Foods. All you have to do is bake them for 16-18 minutes.
Happy "almost"Autumn!
