Ahhh...it is utter bliss to sip a great tea accompanied by yummy delectable treats, while watching the sea. It's even better when what you are eating and drinking is good for you.
I was getting ready for an afternoon tea at a friend's house and wondering what to make. Since, I have been writing about the goodness of blueberries, I decided o
n blueberry pie...the healthy way! I used Wholly Wholesome organic whole wheat crust from the freezer section at my whole foods market. It made the process so much easier and also semi homemade. The crust was outstanding and now I always keep one pie shell in my freezer for a quick dessert. Also, Wholly Wholesome makes a fabulous frozen blueberry pie!Drinking tea, especially herbal and green tea has tons of antioxidants. Just ask Dr. Eric Braverman. he is a big advocate of drinking tea because it's full of nutrients, especially polyphenols. These antioxidants can improve your health. "Studies have shown that tea drinkers, those who consistently drink two cups or more a day, have:
• A lower risk of cancer
• A lower risk of cancer
• Healthier intestinal flora, which inhibits bacteria
• A lower risk of heart disease
• Improved their glucose tolerance, preventing diabetes
So, how was the high tea by the sea? It was simply lovely. I drank a cup of green tea while eating hamachi and other sushi (all loaded with omega 3) and then had a cup of roobis tea while eating the delicious blueberry pie. So sit back have a cup of tea and don't feel guilty having a piece of this pie because this high tea is an antioxidant afternoon!!
Blueberry Pie
4 cups of blueberries
1/4 cup of sugar
1/4 cup of sugar
1/4 cup of honey
4 tablespoons of whole wheat flour or tapioca flour
1 tablespoon of orange juice or a squeeze of lemon juice
1 (9-inch) wholly wholesome pie crust

Directions
Pre heat oven to 350 degrees
In a bowl, Mix washed and dried blueberries with flour, then add the sugar and honey and orange juice. Pour the blueberry mixture into the pie shell. Another trick is to buy a second pie shell, defrost and roll the dough out and cut into strips and lay it in a lattice pattern across your pie. It really adds a homemade touch.

Bake for 45 minutes to 1 hour and let it cool before serving.


















Your pie looks delicious. i am never satisfied with any pie crust that is pre-made so i will check my stores to see who carries wholly wholesome!
